2 1/2 c. flour
1 1/2 c. sugar
1 T. baking powder
1 tsp. salt
1 tsp. cinnamon
4 eggs, beaten
3/4 c. oil
2 c. shredded zucchini
1/2 c. uncooked oats

Directions:
Directions:
Mix together the flour, sugar, baking powder, salt, and cinnamon. Combine the eggs, oil, and zucchini. Pour the zucchini mixture into the flour mixture and add the oats. The batter will be lumpy. Put into a greased muffin pan. Bake for 20 minutes at 400º.
