1/4 cup soy sauce
2 tablespoons fresh ginger, grated
2 cloves garlic, minced
1 pound chicken breast halves, boneless and skinless cut into 2 inch pieces
1/4 cup hoisin sauce
1/4 cup sesame seeds
1/4 cup scallions, finely chopped for garnish

Preheat the oven to 400 degrees F. Adjust oven rack to upper position. Grate the ginger using a micro-plane grater for best results. In a bowl, whisk together the soy sauce, ginger and garlic. Add the chicken, toss to coat, cover and refrigerate for 20 minutes. Drain and discard the marinade. Skewer the chicken cubes onto wooden skewers. Coat chicken with Hoisin sauce and sprinkle with sesame seeds. Place on a broiling pan or baking sheet lined with aluminum foil for easy cleanup and bake until the chicken is cooked, about 15 to 20 minutes. Just before serving sprinkle with scallions. Serves 4.
