4 medium Idaho or russet potatoes (baked & hot)
4 Tbsp butter (room temp)
2 Tbsp heavy cream
3/4 tsp salt
1/4 tsp ground black pepper
1/8 tsp ground nutmeg
2oz ripe brie cheese, cut into 1" cubes (room temp)
2 Tbsp crumbled cooked bacon
1 Tbsp chives (minced)

1. Preheat oven to 375º; line a shallow baking pan with foil.
2. Slice off the top third of each potato (lengthwise)
3. Carefully scoop out the potato flesh of each potato into a medium bowl leaving a 1/2" thick shell. Scoop out any potato flesh from the tops into the bowl and discard the top skin.
4. Add butter, cream, salt, pepper, & nutmeg to the bowl of potatoes and mash until combined (some lumps are desirable)
5. Fold the brie, bacon, & chives into the potato mixture.
6. Mound the mashed potatoes into the potato shells and place in the prepared pan.
7. Bake 12-15min, until cheese has melted ans stuffing is heated through.
8. Brown under broiler until golden brown.
