3 lb. boneless pork roast
3/4 c. California salad dressing
4 medium potatoes (quartered)
4 medium beets (quartered)
4 medium carrots (quartered)
4 small onions (quartered)

Directions:
Directions:
1. Preheat oven to 350º
2. Place pork in a large lightly greased roasting pan; brush with 1/2c. of the dressing
3. Place vegetables in a large bowl & add the remaining 1/4 c. of dressing; toss to coat
4. Add potatoes & beets with pork in pan and bake for 15 min.
5. Add onions and carrots to pan & bake for 1 1/2 hours or until pork is cooked through (160º); basting occasionally with juices in the pan.
6. Let stand 10 min before cutting pork into slices.
7. Serve with the vegetables.
