4 boneless pork loin chops (butterflied)
8oz crumbled blue cheese
4 slices of bacon (cooked & crumbled)
2 Tbsp fresh chives (chopped)
garlic salt to taste
ground black pepper to taste
fresh parsley (chopped) for garnish

Directions:
Directions:
1. Preheat oven to 325º & grease a shallow baking dish
2. In a small bowl, mix together the blue cheese, bacon, & chives.
3. Divide into quarters and pack into a loose ball.
4. Please each ball into a pocket of a butterflied pork chop, close, and secure with toothpicks.
5. Season each chop with garlic salt & pepper. (Keep in mind that the blue cheese will also be salty)
6. Bake until meat is cooked through. (About 20 min.)
