1 1/2 lb flank steak
ground mustard to taste
1/2 lb thick sliced bacon
2 large onions (sliced)
1 (16oz) jar of dill pickle slices
2 Tbsp butter
2 1/2c. beef stock
1/2c. dry red wine
1 Tbsp. cornstarch

Directions:
Directions:
1. Cut the flank steak into thin filets; about 1/4" thick and 3" wide.
2. Generously spread one side of each filet with mustard (to taste).
3. Place bacon, onions, & pickles on each filet and form into a roll.
4. Use string or toothpicks to hold the roll together.
5. Heat a skillet over medium heat and melt butter.
6. Place the rolls in the butter and saute until browned.
7. Pour in beef stock and wine and stir.
8. Simmer the rolls for at least an hour.
9. Remove the beef rolls and set aside. Stir in cornstarch and bring to a boil, stirring the liquid until thickened.
10. Serve resulting gravy over the rolls or on the side.
