2 tablespoons cornstarch
1/4 cup cold water
2 cups de-fatted broth or drippings from meat

Directions:
To make de-fatted drippings: Add water or liquid from cooking vegetables to roasting pan after meat has been removed. Heat gently, scraping the bits of browned meat from the pan into the liquid. Pour all liquid from the pan into a gravy separator, pour de-fatted broth from separator into saucepan. If using measuring cup, remove fat from broth with spoon and discard.

In small cup or bowl, add cold water to cornstarch and mix well to dissolve cornstarch. Place de-fatted broth or drippings from meat in small saucepan. Heath gently, but do not boil. Slowly pour cornstarch mixture into hot broth or dirppings, stirring constantly. Remove gravy fromheath when thickened and serve hot.

use 1 tablespoon cornstarch to each cup of broth for medium sauce or gravy. If thinner gravy is desired, use 1.5 teaspoons cornstarch to each cup of liquid.
