Mutton Biryani Recipe

Marinade:
2 Kgs Mutton
12 Medium Size Onions
2 Pods of Garllic
12 spicy Green Chillies
Corriander Powder
Salt to taste

Rice:
2 - 3 Cups of RIce
Bay Leaves 2
Cinamon Sticks 3
Cloves 4
Peppercorn (to taste)

Soak rice in water for 30 minutes and keep aside
Grind Onions, Garlic and Green Chillies to fine paste
In a large wok, put 1 tbsp of ghee and fry the ground paste of Onions, Garlic and Chillies, until the paste turns slightly brown. Add salt to taste
Add the mutton into the mixture and cook until tender
Add double the cup of water as the rice into a vessel, along with the spices for the rice mix mentioned above
Once the water boils, add the soaked rice into the vessel
Once the rice and the mutton is cooked, layer the mutton and the rice and cover with aluminum foil.

Just before serving, layer the biryani with coriander leaves and jullienes of ginger
