1 c. cake flour
1/2 tsp. cream of tartar
1/3 c. water
1 1/4 c. sugar
5-7 egg whites
1 tsp. vanilla
5-7 egg yolks

Preheat oven to 350º
To prepare 9-inch tube pan, bake and cool, see About Angel Cakes, pg. 619, 1931-1964 Joy of Cooking.
Sift before measuring, 1 c. cake flour.
Resift with 1/2 tsp. cream of tartar.
Boil to the soft-ball stage at 240º, 1/3 c. water and 1 1/4 c. sugar.
Whip until stiff but not dry, 5-7 egg whites.
Pour syrup over egg whites in a fine stream, beating constantly until mixture is cool.
Add 1 tsp. vanilla.
Beat well and fold in 5-7 egg yolks.
Fold in the sifted flour, 1 tbsp. at a time.
Bake about 45 min.

Orange Icing for Sunshine Cake:
2 c. sifted confectioner's sugar
1 tbsp. melted butter
1 tbsp. grated orange rind
1/4 c. orange juice, or 3 tbsp. orange juice and 1 tbsp. lemon juice
Place ingredients in top of double boiler for 10 min to cancel out raw taste of powdered sugar.
Beat the icing until cool and a good spreading consistency.
Dribble on warm cake to make glossy finish.

We remember this as a favorite birthday cake. Light and delicious with a citrus glaze that forms sweet/tart crust. Polly was able to whip this cake out effortlessly for special occasions but it is not for inexperienced bakers.
