2 cups onion, chopped
2¾ cups celery, chopped
¼ cup butter
½ tsp. salt
¼ tsp. pepper
¾ cup flour
½ cup butter
2½ cups milk
2 cups grated cheddar cheese
2¾ lbs.cooked seafood (lobster, crab, shrimp, etc)

Directions:
Directions:
Saute onion and celery in ¼ cup butter until tender; stir in salt & pepper. In a separate saucepan, melt ½ cup butter, add flour, mix then slowly add milk. Stir constantly. Stir in cheese and cook until cheese has melted. Remove from heat. Combine celery mixture with seafood. Turn into a large casserole dish and pour the cheese mixture over top. Bake at 350º for 15-20 minutes or until bubbly and brown.
