1/2 c. shortening
1 3/4 c. sifted cake flour
3/4 c. sugar
2 1/2 tsp. baking powder
1/2 tsp. salt
1 egg
3/4 c. milk
1 1/2 tsp. vanilla

Directions:
Directions:
Stir shortening just to soften; sift in dry ingredients; add egg and half the milk and mix until flour is dampened; beat 2 minutes at medium speed; add remaining milk and vanilla; beat 2 minutes longer; bake in paper-lined or lightly greased and floured 9x9x2in. pan at 375º for about 25 minutes or until done.

My Daddy, Frank McKendred Salkeld, would bake this cake often for us four kids. My first memory of this special treat was when we lived on Barrow Road in Little Rock. He continued baking this cake for us through the years of our living on 13th Street by the Boys Club in North Little Rock and on Sycamore in Levy. Oh, the little things.....they are priceless!
