6 apples (Golden Delicious and Granny Smith)
5 T. sugar
1 T. cinnamon
2-3/4 c. flour
1 T. baking powder
1 tsp. salt
1 c. vegetable oil
2 c. sugar
1/4 c. orange juice
2-1/2 tsp. vanilla
4 eggs
1 c. walnuts, chopped (optional)

Preheat oven to 350º. Grease a tube or bundt pan. Peel, core and chop the apples into chunks. Mix with 5 tablespoons of sugar and cinnamon. Set aside.

Sift together flour, baking powder and salt in a large mixing bowl. In a separate bowl, whisk together oil, 2 cups sugar, orange juice and vanilla. Mix the wet mixture into the dry ingredients. Add eggs, one at a time. Make sure all ingredients are well mixed.

Pour half the batter into the prepared pan. Sprinkle half the apple mixture over it. If using walnuts, sprinkle half the nuts over the apples. Pour the remaining batter over the apples and top with the remaining apple mixture and walnuts.

Bake approximately 1-1/2 hours or until a toothpick inserted in the center comes out clean.
