6 cups bread cubes (12 slices)
4 eggs
1 1/2 cup milk
1/4 cup white sugar, divided
1/4 tsp. salt
1 tsp. vanilla
2 Tbsp. margarine, softened
1 tsp. ground cinnamon
maple syrup/ or powdered sugar

Preheat oven to 350º. Spray a 9x13" pan with cooking spray and coat with little margarine or butter. Line bottom of pan with bread cubes. In lg. bowl, beat together eggs, milk, 2 Tbsp. sugar, salt and vanilla. Pour egg mixture over bread. Dot with margarine. Let stand 10 minutes (or can refrigerate overnight).

Combine remaining 2 Tbsp. sugar with 1 tsp. cinnamon and sprinkle over top. Bake 45-50 minutes until top is golden brown. Drizzle maple syrup over when comes out of oven, or just top with powdered sugar.

I found this recipe in a cookbook I had, and looked up variations online. I made this for church brunch and it was pretty good. Another variation said to use Raisin Bread. Enjoy!
