Ingredients: 4 chicken breasts, boneless, skinless ½ c. flour 2 eggs, beaten ¾ c. breadcrumbs ¼ c. grated Parmesan cheese 1 tbsp. oil 2 tbsp. butter 2 tbsp. flour 1¼ c. milk 1 tsp. salt ¼ tsp. each pepper, dried basil, oregano ¾ c. tomato sauce 1 c. grated mozzarella cheese
Tomato Sauce: 1 onion, chopped 1 clove garlic, minced 1 – 20 oz. can tomatoes (pureed or diced ) 1 – 12 oz. can tomato paste 1 ½ c.water ½ c. red wine 1 tbsp. sugar 1 tsp. salt ½ tsp. pepper 1 bay leaf

Directions:Pat chicken dry. Pound to flatten slightly. Dust chicken lightly with flour. Dip in egg. Combine breadcrumbs with Parmesan cheese. Pat breadcrumb mixture into the chicken. Line a 9x13 baking dish with foil, brush with oil. Arrange chicken in dish in a single layer. Bake in a preheated 400º F oven for 20 mins. Meanwhile, in a medium saucepan melt butter and whisk in 2 tbsp. flour. Cook, without browning 3 mins. Whisk in milk. Bring to a gentle boil. Add salt, pepper, basil and oregano. Reduce heat. Cook 5 mins., stirring often. Spread some of the sauce on each piece of chicken. Drizzle with tomato sauce. Sprinkle with grated mozzarella cheese. Bake 15-20 mins. longer or until chicken is done.
Tomato Sauce: In a large pot, cook onions in oil until just golden, add garlic, sauté one minute longer. Add remaining ingredients. Simmer slowly without boiling for at least 1 hour. |
