4 egg whites
¼ tsp salt
1 cup sugar
4 tsp cornstarch
2 tsp white vinegar
1 tsp vanilla
3 cups diced tropical fruit: mangoes, kiwi, strawberries etc.
1 cup whipping cream

Directions:
Preheat over to 275F.
Beat egg whites with salt until they hold stiff peaks.
Add sugar, 1 tsp at a time, beating until mixture is stiff and shiny, then beat in cornstarch, vinegar and vanilla.
Trace outline of a 9 inch diameter cake pan on brown paper and mound meringue onto it.
Build higher around edges and flatten centre.
Bake 1 ¼ hours, then turn off oven and leave meringue to dry (overnight is best) in the oven.

Whip the cream; add sugar to taste and pile into meringue shell. Arrange fruit on whipped cream, saving some whole strawberries for garnish.
