3 quarts turkey stock
3 large onions, chopped
2 large carrots, chopped
3 stalks celery, chopped
¼ c. uncooked rice (white, brown or wild)
1 c. butter or margarine
1½ c. flour
1 pint ½ and ½ (or milk)
3 c. diced turkey (I use more)

Directions:
Directions:
In saucepan, combine onions, celery, carrots, rice and 1 quart stock. Cook for 20 minutes and set aside. In large soup kettle melt butter and blend in flour and heat until bubbly. Add ½ and ½ and remaining 2 q. stock to butter/flour mixture. Cook and stir until bubbly. Stir in vegetable mixture, turkey and seasonings to taste. Heat slowly to serving temp.

I make this recipe all the time. You can substitute or add vegetables (corn is good). Make sure to stir all the way to the bottom of the pot; the rice sinks.
