1 Eggplant, thinly sliced
Mozzarella, sliced.
Tomato sauce
Basil leaves
Directions:
Directions:
Slice eggplant and lay out on a baking sheet on top of paper towels.
Salt lightly, and place another sheet of paper towel on top. Place another baking sheet on top with some weight on it (Water jugs). Leave for 1 hour.
Place a slice of mozzarella on a slice of eggplant, add a spoonful of tomato sauce and basil leaves, then cover with another slice of eggplant. Grill on BBQ or in the oven until the eggplant is cooked. Serve as an appetizer of light supper.
