1 lb of thinly sliced beef (fast fry)
3-4 slices of pancetta, prosciutto or bacon
Chopped garlic
Chopped herbs – basil, parsley
Parmiggiano cheese
Salt and pepper
¼ cup Olive or canola oil
Tomato sauce, plain.

Directions:
Pound the fast fry beef into thin slices. Place some pancetta or bacon on half of the slice. Add the herbs, garlic, parmiggiano, salt and pepper on the whole slice.
Roll the slice into a log, securing with toothpicks.

Brown the rolls in hot oil. When all are browned, cover with tomato sauce and simmer for 2 hours. Add salt to the tomato sauce if required to taste.

Serve tomato sauce on pasta, and serve brasciole as a side dish.
