2 packages ricotta, (not the kind in tubs, the kind in plastic package)
1 ½ cups of milk
6 eggs
¼ - ½ cups of sugar
Grated zest of 1 lemon
2 tsps vanilla
Cinnamon (optional)

Directions:
Directions:
Preheat oven to 250º
Mix together the ricotta and the milk. Add eggs, sugar, zest, and vaniila, and mix for 2 minutes until smooth. Pour into a flan style pan, preferably ceramic. Spray with non-stick spray or butter lightly. Bake at 250 degrees in the middle of the oven until the top begins to become golden. Turn off oven, and leave in to oven to cool.

Serving options: Sprinkle with cinnamon before baking. Serve with sliced fruit or fruit coulis (blueberry or raspberry is wonderful)
