1 cups all-purpose flour
1/4 cup granulated sugar
2 tsp baking powder
1 tsp baking soda
Pinch of salt
1 cup semi-sweet chocolate chunks or chips
2 cups mashed bananas (about 5 bananas)
1/4 cup milk, buttermilk or plain yogurt
1/2 cup butter melted
2 eggs

Preheat oven to 350º
Grease 9 inch by 5 inch (2 litre) loaf pan.
In a large bowl, combine flour, sugar, baking powder, baking soda and salt.
Add chocolate.
In another bowl, whisk together bananas, butter, milk and eggs. Add to flour mixture; stir just until blended.
Spread batter in prepared pan.
Bake in centre of oven about 50 minutes or until tester inserted in middle comes out clean.
Cool on wire rack 15 minutes.
Turn loaf on wire rack; cool completely.

Chopped nuts, raisins, coconut or, chocolate chips can also be added. The original recipe calls for ¼ cup of sugar but will not be noticed if not added.
