2 tbsp olive oil
1/2 lb smoked sausage or chorizo, cut into 1/2 inch chunks
1 boneless skinless chicken breast cut into 1/2 inch chunks
1 small onion
1 stalk celery diced
1/2 medium green pepper diced
1 can (28oz/796ml) diced tomatoes
1/2 cup water
2 pouches chicken flavoured rice side dishes
1/2 lb raw shrimp peeled cut in half
1/2 tsp hot pepper sauce or to taste

Directions:

In a large skillet or dutch oven heat olive oil over medium heat.
Add sausage, chicken, onion, celery and green pepper and cook, stirring until onion is softened and chicken has turned white (6-8 min).
Pour in tomatoes (with juices) and water and bring to boil.
Add both packages of the chicken flavoured rice side dishes, shrimp and hot pepper sauce.
Let mixture return to boil, then reduce heat to low, cover and cook, stirring occasionally, until rice is tender and most of the liquid has been absorbed (about 15 min).
Remove from heat and let sit, covered for 5 min before serving.
