1/2 cup Water
2/3 cup White Sugar
3 tbsp Cornstarch
1 tbsp Butter
6 fresh Peaches, peeled, pitted and chopped
1 - 9in Graham Cracker Pie Crust
Directions:
Directions:
In a small saucepan, stir together water, sugar, cornstarch and butter.
Bring to a boil.
When mixture comes to a boil, add half of the peaches, then lower the heat to medium-low and simmer for 5 minutes until thick and smooth.
Mash peaches slightly.
Remove from heat, and add last half of peaches.
Allow to cool fully.
Pour mixture into pie crust and refrigerate till firm, approx 3 hours.

I have done this recipe without the sugar and butter, and canned fruit. Works just as well with other fruit as well..
