2 T olive oil

1 C chopped onion

5 cloves of minced garlic

1 lb Italian sausage

1 10 oz package frozen, chopped spinach (thaw, drain and pat dry)

1 package manicotti shells, parboiled

2 C cottage cheese (or ricotta)

2 eggs beaten

1 24 oz jar spaghetti sauce

1 8 oz can tomato sauce with basil, garlic and oregano

2 T butter

2 T all-purpose flour

2 T chicken bouillon

2 C half and half

1/4 C chopped fresh Italian parsley

1 C shredded Italian cheese blend

Directions:
Sauté onions and garlic in olive oil until translucent. Add Italian sausage and cook until crumbly and brown. Cook spinach according to package directions. Add spinach, cottage cheese, 3/4 C shredded cheese and beaten eggs to sausage mixture and mix well. Pour 8 oz can of tomato sauce in a 9 x 13 inch pan and spread evenly on bottom. Gently stuff parboiled manicotti shells with meat, spinach and cheese mixture and lay side by side in pan.

White Sauce: melt butter in saucepan over medium heat. Stir in flour and bouillon and cook until bubbly, stirring constantly. Add half and half and bring to a boil. Remove from heat and stir in chopped parsley. Pour white sauce evenly over stuffed manicotti shells. Carefully spoon jar of spaghetti sauce over white sauce, forming 2 layers. Sprinkle remaining shredded cheese over top of red sauce. Cover with foil and bake at 350 F for 45 minutes. Remove foil and bake an additional 15 minutes or until thoroughly heated through. Let stand 5-10 minutes before serving.
