1 c. all purpose flour
1/2 tsp. salt
1 c. milk
1 tbsp. butter, melted
2 eggs
extra butter for iron popover pan or custard cups

Directions:

All ingredients should be at room temp.
Pre-heat oven to 450º
Combine flour, salt, milk, 1 tbsp. butter in blender.
Mix until thoroughly blended, a minute or two.
Add eggs, one at a time. Do not overbeat.
Batter should be the consistency of cream and can be used right away or stored in fridge.
Brush pan or cups with melted butter, fill each cup 2/3 full with batter.
Bake popovers in the preheated oven for 15 min. Reduce heat to 350º and bake until deep brown, about 20 min. Don't open the oven or you may lose the puff!
The Joy of Cooking states that these also may be placed into a cold oven using the same temps and times as above, but that the preheated method is preferred.

Everyone loves, and is fascinated with these airy little muffins. Tension arises because you can't peek into the oven, there is the magic of the puffing up, then the oooh and aaah of taking them out. In our family they were basically used as a vehicle for pats of creamy butter and spoonfuls of homemade strawberry jam.
