Nonstick cooking spray
1 can (10.75 oz) condensed cream of chicken and mushroom soup
1/3 cup dry sherry
2 Tbsp. stir-fry seasoning mix
2 cups leftover chicken, pork, turkey, or shrimp cut into bite-size pieces
1 can (8 oz.) sliced water chestnuts
1/2 cup cashews
4 stalks celery, finely chopped
2 scallions (green onions), sliced diagonally
1 can (5 oz.) chow mein noodles
Scallions (green onions), sliced lengthwise (optional)

Directions:

Preheat oven to 350º F. Spray a 1 1/2-quart casserole dish with cooking spray and set aside.
In a small bowl, whisk together chicken and mushroom soup, sherry, and stir-fry seasoning until smooth.
In a large bowl, combine leftover chicken, water chestnuts, cashews, celery, and scallions. Stir in three-quarters of the chow mein noodles. Stir in soup mixture.
Transfer to prepared casserole dish. Top with the remaining chow mein noodles. Bake in preheated oven for 30-35 minutes. Garnish with scallions (optional).
