1 lb. ground breakfast sausage

12 eggs

1 can cream of mushroom soup

1 can evaporated milk

1 (4.5 oz) can sliced mushrooms, drained

1 lb tater tots, thawed

1 cup shredded sharp cheddar cheese

Directions:
Directions:
Brown sausage, crumble, drain.

Preheat oven to 350' and lightly grease 9x13 baking dish.

Beat together eggs, soup, and milk.

Stir in sausage, mushrooms, and half of cheese.

Pour mixture into baking dish.

Add tater tots, distribute evenly.

Bake for 45-50 minutes (time may vary depending upon oven).

Remove from oven and top with remaining cheese.

Bake an additional 10 minutes.

Leftovers are great reheated in microwave.It can be made ahead the night before. Actually better that way because the tater tots soak up the egg! I usually make it the night before and then bake it while we're opening Christmas gifts the next morning.
