1 3 1/2 lb CHUCK ROAST
SALT & PEPPER
2 T VEG OIL
1 M ONION (chopped)
1 small CARROT (chopped)
1 stalk CELERY (chopped)
2 M GARLIC CLOVES (minced)
2 tsp SUGAR
1 C low sodium CHICKEN BROTH
1 C low sodium BEEF BROTH
1 sprig THYME (fresh)
1 1/2 C WATER
1/4 C DRY RED WINE

Directions:
Heat Oven to 300º

Pat Roast Dry & Sprinkle w/Salt & Pepper

Heat Oil in a Dutch Oven until shimmering. Brown Roast on all sides & Transfer to a large plate.

Reduce Heat to Medium
Add Onion, Celery & Carrot to the pot & cook until starting to brown
Add Garlic & Sugar & cook until Fragrant
Add Broths & Thyme scraping bottom of the Pot w/Wooden spoon
Return Roast & any juices back to the Pot & add enough Water to come 1/2 way up the sides of Roast.
Bring to a Simmer & place Foil over Pot & Cover tightly with lid
Transfer to Oven & Turn Roast over every 30 min until fully Tender

Transfer Roast to a Carving board & Tent w/Foil to keep warm

Allow liquid in Pot to settle & skim off Fat & discard Thyme
Boil over High until reduced to 1 1/2 C
Add Red Wine & Reduce again to 1 1/2 C
Season to Taste
