1 c. butter
1/2 c. 10x sugar
2 c. flour
1/4 t. salt
2 c. sugar
2/3 c. fresh lemon juice (appox. 4 lemons)
2 T. lemon zest
4T. flour

Directions:
Directions:
Zest 2 of the lemons. set aside. Squeeze all 4 lemons and set aside. Beat butter and 10x sugar until smooth. Combine salt and flour. Add to the butter mixture and beat until batter just comes together, about 1 min. Press into a greased 9x13" pan. Bake 18-20 minuets until it just starts to brown around the edges. Cool on a rack while making filling.
Filling: Beat eggs and sugar. Add juice and zest. Whisk flour into mixture. Pour over crust. Bake 20 min. until filling is set. Cool on a rack. Cut into bars or squares. Dust with powdered sugar. If not going to use immediately, freeze or store in the refrigerator.

Easy to make and very lemon tasting. If 4 lemons does not give you 2/3 c. add a bit of water.
