Ingredients: 8 eggs (take away 2-3 yolks if you want to cut down on the cholestorol) 1/4 c.diced onion 1/4 c.diced red pepper 3 c. roughly chopped spinach 1 chopped roma tomato 1 cup finely chopped kale (very nutritious!) 1/2 cup finely shredded mozzerella 1 c. minced chicken (I use leftover from last nights dinner)

Directions:Mix all ingredients, pour into a greased baking dish (9x13) and bake in º350 oven for 45 minutes until center is set. |

This dish is so easy to make! You can pretty much add/subtract various veggies but it always seems to come out yummy. Adding kale to this recipe is an awesome way to get some of this "superfood" into your diet and you'll never even know it was in there. My sweet husband has to head out the door very early in the morning and it always makes his day eaiser when he finds this in the fridge. He just cuts himself a serving, heats it in the microwave, adds a piece of whole grain toast and is ready to face the day!
