6 eggs, separated
1 1/3 c. sugar, scant
1 1/3 c. scalded cream
1 c. combination of brandy & sherry
2 2/3 c. heavy cream, whipped stiff

Directions:
Directions:
Beat 6 egg yolks to a cream, add 1 1/3 c. sugar (scant) slowly, beating all the time, until very light.
Pour over it:
1 1/3 c. scalded cream, let cool, add 1 c. brandy and sherry, mix.
Fold in 2 1/2 c. cream, whipped stiff and 6 egg whites beaten stiff.
Partly freeze to mush.

This is actually 1/3 of T's original recipe. Polly scaled it down, probably with the realization that 3 quarts of cream, over a half of a bottle of liquor, almost 5 cups of sugar and a dozen and a half eggs would not only clog your arteries but probably slide you slowly under the holiday table.
