For pudding:
1 tbsp. gelatin
1/3 c. cold water
1/2 c. boiling water
1 c. sugar, scant
1 c. orange juice plus a little grated rind
Juice of 1 lemon
2 egg whites, beaten

For custard sauce:
2 c. milk, scalded
3 or 4 egg yolks
1/4 c. sugar
1/8 tsp. salt
vanilla or rum to taste

Pudding:
Mix 1 tbsp. gelatin into 1/3 c. cold water then dissolve in 1/2 c. boiling water. Add 1 scant c. sugar, 1 c. orange juice plus rind and the juice of 1 lemon.
Mix well and chill. When mixture flakes from spoon beat until fluffy and fold in the beaten whites of two eggs. Keep chilled until time to serve.

Custard sauce:
Scald 2 c. milk. Beat 3 or 4 egg yolks until pale yellow and add 1/4 c. sugar and 1/8 tsp. salt.
Stir scalded milk in slowly and cook in double boiler, stirring all the while, until it thickens or, Polly adds, until it coats the spoon.
Cool, then stir in vanilla or rum to taste.
Polly notes that this is a thin sauce, pour it from a pitcher.
