3 large handfuls of crackings broke-up add
enough warm water to make a mush
2 c. white cornmeal
1 small tsp. soda
1 tsp. baking powder (heaping)
1 tsp. salt
1 1/2 c. buttermilk

Directions:

Preheat oven 450º. Grease a cast iron skillet or oven safe pan about 9 inches, put in oven to get hot while mixing the cornbread. Pour the mixture in
hot pan put back in oven and bake 25-45 min. and
browned remove from pan and serve hot.

Maw made this often when Paw and Dad butched a hog she made the cracking herself. You will notice there is no oil put in, the crackings take the place of any oil or grease of any kind.
