4 C tops set aside to steam

4 C stems chopped
1 onion chopped
2 stalks celery chopped
2 T chicken soup base
2 t garlic powder
2 t onion powder
1 t dried basil leaves

Directions:
Simmer above in 2 qts water until very soft or enough to cover veggies. Cool and blend. In small pan melt 4 sticks butter add 1 1/2 C flour, mix until smooth over low heat. Pour #1 into soup pot, bring to boil, remove from heat. Add 1 qt milk and 1/3 C dry sherry. On low heat add 1/3 = 3/4 C soup, turn heat up and wisk constantly until starts to bubble and is very thick. Turn to low and wisk in 3 C cheddar (approx 12 oz) or more - melt - taste, add garlic salt etc if needed. Add steamed tops.
