2 - 9 inch pastry shells, uncooked
1 cup brown sugar
2½ tbsp. flour
1 cup raisins
1 cup boiling water
1 tsp. lemon rind
1 tbsp. lemon juice
¼ tsp. salt
1 tbsp. butter

Directions:
Directions:
Heat oven to 425º. In a medium saucepan, mix together sugar and flour. Pour in water and bring to a boil. Add raisins and stir constantly. It will thicken. Remove from heat and stir in butter, juice and rind. Let cool slightly. Pour mixture into pie shell. Put top pastry and pinch edges. Put in 425º oven for 10 minutes then turn down to 350º and bake another 30 - 40 minutes or until filling starts to rise.
