Two Pounds Tennessee Pride Mild Sausage
1 ½ Jars (Large) of Ragu – Thick and Hearty Garlic
1 Large Onion (coarsely chopped)
Brown Sugar to taste
Garlic Powder to taste
Basil to taste
Cheese: Three packages of large slices of mozzarella; one small container of 1% milk fat cottage cheese, mix with two beaten eggs.

Brown meat and onion, and drain. Add Ragu and seasonings. Let sauce simmer for about 30 minutes.

In a large three-quart oblong casserole dish, place a little sauce on the bottom of the dish to prevent noodles from sticking to bottom. Place three noodles lengthwise – cover noodles with sauce. Dot the sauce with cottage cheese mixture and use a fork to spread it out. Put four slices of mozzarella on top and repeat process two more times: sauce, noodles, sauce, cottage cheese, mozzarella.

Add sauce on top after last layer of mozzarella so that the cheese doesn’t dry out in baking. Place dish on cookie sheet and bake 350 degrees (30 – 40 minutes or until bubbling). Do not over cook. Add a package of shredded mozzarella cheese on top before serving.
