2/3 c shortening
2/3 c sugar
2 eggs
1 tsp vanilla
1 tsp grated lemon peel
2 c flour
1 1/2 tsp baking powder
1/2 tsp salt
FILLING: Cook 1/4 cup sugar, 1 TBSP cornstarch and 1 small can of crushed pineapple until thick then cool.

Cream shortening and sugar. Add eggs. Beat well. Stir in vanilla and lemon peel. Sift flour, baking powder adn salt together. Stir into creamed mixture. Chill. Roll out on lightly floured board to 1/8 inch thick. Cut dough with 2 1/2 inch round cookie cutter. Place half of the cookies on an ungreased cookie sheet. Spread a teaspoon of filling on each cookie. Cut small slits in the remaining cookies and place them as a topping over the filling. Seal the edges with a fork. Bake in 400º oven for 8-10 minutes.

Mother made these one year for our prom. We found the recipe in some book. We loved them and enjoyed making them together several times. Too time consuming to do very often but they are good.
