1 pie crust
12 slices bacon (about ½ lb) crisply fired and crumbled
1 cup shredded Swiss cheese (4 ounces)
1/3 cup minced onion
4 eggs
2 cups light cream or whipping cream
¾ teaspoon salt
¼ teaspoon sugar
⅛ teaspoon cayenne red pepper

Directions:
Directions:
Heat oven to 425º. Sprinkle bacon, cheese and onion in pastry-lined pie pan. With rotary beater or whisk, blend remaining ingredients; pour into pie pan. Bake 15 min.

Reduce oven temperature to 300º. Bake pie 30 minutes longer or until knife inserted 1 inch from edge comes out clean. Let pie stand 10 minutes before cutting. Serve in wedges. 6 servings.

Personal Notes:
“et al” – replace the bacon, swiss, and onion (the ‘Lorraine’ part) with ham, smoked gouda and shallots, or spinach, tomato, and cheddar. In other words, use your left-overs, favorite cheese, and the same egg mixture and you’ll have a terrific quiche!
