1T milk
1-1/2 t instant espresso
1 c sugar
1 c butter, softened
2 1-oz semi-sweet baking chocolate squares, melted
2-1/2 c all-purpose flour
2t cinnamon
½ t baking powder
½ t salt

Coating:
6 1-oz white chocolate squares, melted
8t vegetable shortening
6 1-oz semi-sweet chocolate squares, melted
(Or you may use the commercially prepared bark coating and if you do omit the vegetable shortening.)

1. Combine milk and espresso powder in small bowl. Let stand for 5 minutes to dissolve.
2. Combine sugar and butter in large mixer bowl. Beat at medium speed, scraping bowl often, until creamy (1 to 2 minutes). Add milk mixture and egg; continue beating until well mixed (1 to 2 minutes). Add 2 ounces melted chocolate; continue beating until well mixed. Reduce speed to low; add flour, cinnamon, baking powder and salt. Beat until well mixed (1 to 2 minutes).
3. Divide dough in half; shape each half into 7½- inch long roll. Wrap each roll in plastic food wrap. Refrigerate until firm (1 to 2 hours).
4. Heat oven to 350°. Cut rolls into 1/4 –inch slices with sharp knife. Place 1 inch apart on ungreased cookie sheets. Bake for 10 to 12 minutes or until set. Cool completely.
5. Melt white chocolate coating in microwave. Stir often – do not overcook. Dip front of cookies into white chocolate halfway up the face. Place on cooling rack over waxed paper to set. Let stand until fully set.
6. Melt chocolate coating in microware. Stir often – do not overcook. Dip front of cookies into chocolate ¼ turn, halfway up the face, overlapping the white.. Place on cooling rack over waxed paper to set. Let stand until fully set.
