6½ -7lb Crown Roast of Pork (or Loin if Crown is not available)
Salt & pepper to taste
1 small chopped onion
1/3 cup celery, chopped
3T butter
3c drained sauerkraut
2c toasted bread cubes
1 granny smith apple, pared, cored & cubed
Honey
¼ t. ground sage
1/8t. basil leaves

Directions:
Directions:
Place pork on aluminum foil in shallow roasting pan. Salt & pepper. Roast in 325° oven for 2 hours. Meanwhile, sauté onion and celery in butter until soft. Combine with sauerkraut, bread, 2T honey, sage and basil. Mix well. Fill center of roast with stuffing (or place it around loin roast). Roast 1½ hours longer. Brush or drizzle roast and stuffing with honey for last ½ hour of cooking time.

Serves 8-10 depending on size of roast.
