1/4 cup vegetable oil
1 cup chopped celery
1 cup chopped green pepper
1 cup chopped onion
2 cloves garlic, minced
4 cups beef broth
1 (16 ounce) can tomatoes
1package (10 ounce) sliced okra
1/2 tablespoon thyme
1 bay leaf
1/2 tablespoon cayenne pepper
1/2 teaspoon oregano
1 tablespoon salt
2 cups catfish fillets cut in 1 inch cubes

Directions:
Heat oil in large stock pot. Saute celery, green pepper, onion and garlic. Add beef broth, tomatoes, okra, thyme, bay leaf, cayenne pepper, oregano and salt. Cover and simmer 30 minutes. Add catfish and continue to simmer 15 minutes or until catfish flakes easily
