3 lb Eye of Round Roast
Salt and Pepper to taste
Garlic

Directions:
Directions:
Slice a few clove of garlic into pieces. Make small slits all around the meat and insert the garlic pieces into the slices on the beef.
Season roast with salt and pepper and any other seasonings you may desire. (I do not add any additional seasonings)
Place roast in roasting pan or baking dish. Do not cover or add liquid. Place in 500º F oven and then immediately turn down to 475º degrees. Roast at 475º for 7 minutes per pound.
After that, turn oven off and let roast sit in the oven for 2.5 hours. Do NOT open the oven door during this time.
Remove roast; rest and carve.
