2-1/2 cups Flour
One teaspoon course salt
One teaspoon sugar
One cup (two sticks) unsalted butter-cut into pieces
1/4 to 1/2 cup water

Directions:
Directions:
Combine flour, salt, and sugar in the bowl of a food processor. Add butter, and process for a few seconds until the mixture resembles coarse meal, about ten seconds. Add ice water in a slow steady stream, pouring it through the feed tube just until dough holds together. Do no process for more than thirty seconds.
Turn dough out onto a work surface. Divide into two equal pieces and place on two separate sheets of plastic wrap. Flatten, and form two discs. Wrap and refrigerate at least one hour before using.
Remove one of the discs from refrigerator and on a lightly floured surface, roll into a circle slightly larger than an 11-inch pie plate, and press into pie plate. Add prepared fruit filling. Dot with butter.
Roll out the remaining dough disc and place on top of filling. Crimp to seal. Brush with beaten egg, and sprinkle with additional sugar.
