1-28 oz. can diced tomatoes, undrained
3/4 c. diced green peppers
3/4 c. diced celery
3/4 c. diced onion
2/3 c. uncooked long grain rice
1/3 c, vegetable oil
1 Bay leaf
salt and pepper to taste

Directions:
Directions:
In 2 qt. casserole dish, combine all ingredients, mix well. Cover with foil, bake at 350º for 1 hour 15 minutes. Stir once during baking. Remove Bay leaf before serving.
