1-31-oz Can Enchilada Sauce
1-10oz Can Rotell diced tomatoes with green chills
1-4oz Can Sliced Black Olives
1-15oz Can Corn Drained
1/2 Each Diced Bell Pepper and Onion
1 Clove garlic - Minced
1 tbs cumin seed
6-C. Water
1 pkg. Chicken tenders cooked and cut into bite size pieces (1-3 lbs depending on family size)
1-15oz Can pinto beans rinsed and drained
1-2 tbs corn meal

Directions:
Directions:
Place all the ingredients in a pot and bring to a boil then turn down and simmer for 1 to 1 1/2 hours. It will be sort of thick (like pancake batter). Serve in bowls with crushed Doritos on top and a dollop of Sour Cream. It's tasty and hearty!!
