Sweet potatoes - pared and cubed
oil
1 c. white sugar
water

Directions:
Directions:
Heat oil in pan, cook the potato cubes to light golden brown, set aside. Remove oil from pan and lower heat, Put sugar in the pan and slowly melt it. Add potatoes back into the pan, fully coat the potatoes and remove from heat. (Dip potatoes in water to stop the candied floss) Serve immediately.

This recipe is from our tour guide Wendy Wei in China - we were talking about yummy foods and she offered me this. You may need to adjust the amount of sugar depending on the amount of potatoes you are making.
