1½ cups flour
1½ cups quick-cooking oats
1½ cups granulated sugar – divided
½ teaspoon baking soda
¾ cup cold butter or margarine
2 cups peeled, chopped peaches
2 Tablespoons cornstarch
2 Tablespoons lemon juice

Directions:
Directions:
In a large bowl, combine the flour, oats, one cup sugar and baking soda.
Cut in the butter until mixture resembles coarse crumbs.
Reserve two cups of the mixture for the topping.
Press the remaining crumbs into the bottom of a greased 13x9x2 inch baking pan; set aside.
In a saucepan, combine peaches, cornstarch, lemon juice and ½ cup sugar. Bring mixture to a boil, stirring constantly.
Cook for two minutes until the mixture is thickened.
Spread peach mixture evenly over the crust.
Top with reserved crumb mixture.
Bake at 375 for 35 minutes until golden. Cool completely before cutting into bars.
