1 lb. bacon
4 to 6 potatoes
Onion, optional
Eggs
Salt and pepper

Directions:
Directions:
Cut bacon into 2" strips. Brown in electric skillet. Remove bacon and drain part of the grease. Place sliced potatoes and chopped onion in skillet, salt and pepper and cook until potatoes are almost done. Stir in bacon pieces. Crack each egg and place over skillet mixture. Cover and cook until eggs are done. Cut around each egg portion and place on each serving plate.
