Ingredients: 3 vine ripe tomatoes, cut into chunks 1 red onion, thinly sliced 1/2 European seedless cucumber, cut into bite-size chunks 1 small red bell pepper, seeded and cut in chunks 1 small green bell pepper, seeded and cut in chunks 1 cup Kalamata black olives/1 -(5 ounces) jar pitted Kalamata Olives 1 (4 ounces) package Feta Cheese, crumbled Lettuce 20 ounces Lettuce Leaves
Vinaigrette Dressing
6 tbsp Olive Oil 1 tsp Garlic Powder 1 tsp Dried Oregano 1 tsp Dried Basil 1 tsp Dijon Mustard 1 tsp Fresh Lemon Juice 1 1/2 cups Red Wine Vinegar

Directions:1) Add chopped cucumber, chopped tomato, Kalamata olives, feta cheese, sliced red onion, romaine lettuce, and baby greens to large serving bowl.
2) Mix dressing in a small bowl, whisk olive oil, garlic powder, dried oregano, dried basil, Dijon mustard, fresh lemon juice, and red wine vinegar. Serve along side or toss with salad the choice is yours enjoy! |

Notes: So as most Monday's begin we start to think about eating better, making wiser choices (like those phrases better). So thought today's recipe could accompany the healthy life style our H50 ohana inspire within us. So lets face it if Steve and Chin were catching dinner, guess we might need something healthy to accompany our main course.
