12 oz. cream cheese, room temperature
1/4 c. sugar
1 large egg, slightly beaten
1/2 tsp. vanilla
1 T. cornstarch
1/3 c. sour cream

GRAHAM CRACKER CRUST:
2/3 c. graham cracker crumbs
2 T. sugar
3 T. soft butter

Directions:
Directions:
Preheat oven to 350º.

Mix graham cracker crumbs and sugar together. Add butter and mix well. Press firmly into bottom and 1/3 of the way up the sides of mini spring pan (6 inches). Bake for 6 minutes.

In a large bowl, beat cream cheese and sugar until smooth and light. Beat in eggs, vanilla and cornstarch, only until thoroughly mixed. Stir in sour cream until well blended. Pour mixture into prepared crust and bake in preheated 350º oven for 35 minutes. Allow cake to cool in oven with door slightly propped open for 3 hours. Chill before serving.
