CAKE:
One box white cake mix
3/4 cup oil
8 ounces sour cream
3 eggs
15 ounces cream of coconut
1 teaspoon vanilla
1/2 teaspoon coconut flavoring
FLUFFY FROSTING:
8 ounces cream cheese, softened
1/2 cup powdered sugar
2 Tablespoons milk
1/4 teaspoon almond flavoring

3-1/3 cups whipped topping, room temperature
2 cups flake coconut

CAKE:
Preheat oven to 350. Grease and flour two 9x9 pans.
Combine above cake ingredients until just blended, do not over mix.
Pour into two 9x9 inch pans and bake at 350 for about 20-25 minutes, or until toothpick comes out clean.
Cool completely. Cover cakes with plastic wrap and put in refrigerator overnight

FLUFFY FROSTING:
With mixer combine cream cheese, powdered sugar, milk, and almond flavoring.
Using a rubber spatula, fold in whipped topping and coconut until well blended. Do not overblend.
If frosting is too thick, add one more Tablespoon of milk.
This cake stores well covered and refrigerated for up to five days.
